Arriving on Maui early in the 90’s, head chef Mark Shimer was on the front lines as the emergence of the creative Pacific fusion cuisine exploded on the culinary scene. This exciting and vibrant new cuisine soon evolved into ‘Island Cuisine’ in Hawaii, a style focused on local produce and products with global influence.
Chef Shimer then took it to another level, brining that style of cuisine to Maui’s exclusive locations.
